It is a mechanical fit I think. If I remember Fred Dinage's explaination 
of this on 1970's TV program HOW. Basically the metal surface is etched 
with acid forming little bubbles. The molten non stick (teflon) is 
sprayed on surface and when it sets enough of it is caught inside the 
partial bubbles.  This is why when a non stick pan wears out it goes 
really sticky as the underlying surface isn't at all smooth.
