Why do sandwich shops never pack the fillings _into_ their baguettes?

or rather...

When selling a baguette made to look as packed as possible by balancing 
the filling on the very top, why don't they spatula the filling into the 
baguette so you can actually eat the damn thing without breaking your jaw.
